When Aaron Pott slid this glass across the table, we loved it even before tasting.  With it’s deep, opaque purple color and saturated ruby rim, you could tell just by looking that there was no shortage of concentration!  And the taste delivers!  Bold, volcanic soil character announces itself with strong graphite whiffs, red and black berries mingling and a true varietal note of roasted chiles mixed with dark chocolate.  Absolutely freaking on-point, and with just enough tannin to tear up a good rib-eye. 

About the wine

ÆRENA’s single-vineyard Cabernet Sauvignon is farmed by the Oakville legends, the Beckstoffer Family. They meticulously care for Cabernet vines at a 2400 ft. elevation in the Red Hills of California’s North Coast. These mountain vineyards are the result of the same volcanic and tectonic processes that formed the terroir that one recognizes in the great Mountain Appellations of Napa. As one would expect of mountain viticulture, elevation moderates temperature extremes and diurnal shifts, allowing for a long growing season that results in complex flavor development. The intensity of flavors is magnified by vine stress from well-drained, iron-rich vineyards littered with black obsidian, quartz crystal, and volcanic gravel.

"This standout Lake County Cabernet shows exceptional lushness of fruit and a wonderful smoothness on the palate hard to match for this variety. The dark cherry and roasted chocolate nose turns to blackberry fruit and roasted red pepper skins which is followed by a rosemary herbalness and mouthwatering applewood-smoked bacony richness. The palate reveals intense juicy black currant fruit with just enough smokey oak and pencil lead minerality to lend complexity and balance. The velvety mouthfeel finishes dry with mint and licorice. Pair with grilled T-Bone with pepper sauce, spicy lamb and vegetable kabobs or Bar-b-que Chicken."
